菠萝牛奶面包

  • 牛奶120克

  • 酵母4克
  • 黄油30克

Steps to make 菠萝牛奶面包

  • 1.把除黄油外的原料放入面包机搅拌20分钟。
  • 2.加入黄油,再搅拌20分钟,搅成可拉出稍具透明薄膜状的面团。
  • 3.面团放入容器内盖上盖进行基本发酵。
  • 4.酥松粒:30克糖粉,50克低粉和5克奶粉混合均匀,再加入切碎的黄油40克,用手轻轻搓揉成均匀的松散状备用。(用不完的可放冰箱冷藏)
  • 5.菠萝洗净切小块放入盆内,加上白糖进行腌制。
  • 6.腌出果汁和果胶。
  • 7.放入不锈钢锅内熬煮
  • 8.待汁变稠后加入适量麦芽糖继续熬煮。
  • 9.浓稠后晾凉即成菠萝馅。
  • 10.发酵好的面团等分成12等份,滚圆后盖上保鲜膜松驰10分钟
  • 11.将面团轻轻压扁,用小擀杖擀成圆饼形,包入适量菠萝馅。
  • 12.收严剂口,放入模具内,置温暖湿润处进行二次发酵。
  • 13.发酵好的面团表面刷上一层蛋液,撒上酥松粒。
  • 14.烤箱预热,170度25分钟左右。
