【炒大白菜】---考验厨师手艺高低的一道家常菜
又到了吃大白菜的季节,这个时候的北方白菜、萝卜是主要的冬储蔬菜,在我们当地农村依然有窖白菜、萝卜的习惯,大白菜在旧时是穷人的主菜,尤其在冬天,与萝卜、土豆并列平民百姓过冬的“三大菜”。生活水平提高的今天大白菜现在依然是我们每家每户餐桌上必备的一道菜,特别是胶东大白菜以叶球大,品质好为著称,是中国的特产蔬菜,大白菜做法很多样,清炒、酱炒、炖白菜、凉拌、腌制等等很多做法。
炒大白菜是最普通的一道家常菜,别看这么普通的一颗白菜,只用最简单的操作手法、用最简单调料,而在我们这里炒好一盘白菜是最最能衡量厨师手艺高低的,在餐桌上食客们也往往都会以这道菜评价厨师手艺。
我个人总结要炒好这道菜最关键的是要掌握几个决窍就可以将这道菜炒出好味道的:一是选料,炒大白菜一定要选择窖过的,因为窖过的大白菜水份少,吃起来有些丝许甘甜;二是改刀,白菜改刀时要将白菜叶分成二个部分,上面绿叶部分直接用手大片撕下来,余下的白菜帮用刀斜片,这样的切法,可以将白菜帮子里的筋络都能切断,易熟,而且切面面积大,易入味;三是炒制过程要先炒白菜帮,白菜帮里的水份炒出后并且炒入味了再放白菜叶炒制,这样成熟度相似; 四是大火暴炒,这道菜必须大火猛炒,这样炒出的味道更有味;五是出锅前一定要淋入少许白醋,更会让这道菜锦上添花,掌握好以上几个小窍门在家你也可以炒出大酒店的家常好味道。

Steps to make 【炒大白菜】---考验厨师手艺高低的一道家常菜

  • 1.主料:大白菜一颗
  • 2.副料:五花肉、香菜、葱、姜、蒜、干红辣椒
  • 3.大白洗净后将白菜叶分成二部分,上面绿叶直接用手大片撒下来,下面白菜帮用刀斜片
  • 4.改刀好的白菜备用
  • 5.锅中放油,油热后放入五花肉炒香
  • 6.再放入佐料炒出味道来
  • 7.佐料炒香后先放入改刀好的白菜帮大火翻炒
  • 8.淋入少许生抽入味
  • 9.白菜帮炒制5分熟时再放入白菜叶翻炒
  • 10.加入适量盐
  • 11.炒至白菜绿叶变软时放入香菜段,出锅前再淋入少许白醋即可
