香嫩开胃的凉拌牛肉
牛肉好吃,但传统的炖牛肉没有几个小时甭打算鼓捣熟,嘴馋心急可咋办?最近很火的凉拌牛肉真不赖,我也做了一回,虽然没有炖牛肉那般醇厚,但20分钟立马儿吃上,解馋又省事。

这个拌牛肉的原理很像是涮羊肉,通过焯烫使肉片在短时间内成熟,还保持了牛肉的口感和营养。虽然今儿做的酸辣口儿的,但刚说了跟涮羊肉原理很像,所以也可以尝试做成麻酱口儿或者其它口味的。

  • 香菜1把
  • 大蒜5瓣
  • 小葱2棵
  • 玉米淀粉2小勺
  • 白糖1小勺

Steps to make 香嫩开胃的凉拌牛肉

  • 1.牛肉从冰箱冷冻室取出,胡萝卜削皮、香菜、小葱清洗干净。
  • 2.牛肉切薄片;窍门1:提前数小时冷冻成块,室温下放一会儿,酥冻时切片;窍门2:用冻肉专用刀,刀刃呈锯齿状的,即使是刚取出来的冷冻肉也能切得非常薄。
  • 3.肉片解冻后撒2小勺玉米淀粉。
  • 4.抓捏均匀,通过上浆可使牛肉口感更嫩。
  • 5.烧一锅水,水开后分几批将肉片入沸水焯烫变色即捞出;肉片太凉,需要长时间才能煮沸煮熟,分几次放入能很快成熟,就像涮肉那样;全部焯烫后自然放凉。
  • 6.胡萝卜切细丝、香菜切寸段、小葱切末,大蒜剁碎。
  • 7.胡萝卜丝、一半香菜、一半小葱末、全部大蒜末入大碗,用适量生抽、醋、白糖拌匀;生抽有咸度,盐量根据口味酌情加入;拌匀,使胡萝卜丝略变软。
  • 8.加入牛肉片、剩下的香菜、小葱末,淋少许香油或者辣椒油充分拌匀即可。
  • 9.凉拌牛肉,清爽可口,鲜嫩开胃!
