酱爆鸡丁
酱爆鸡丁是北京地区传统名菜,堪称酱爆菜中的魁首。此菜颜色金红,肉质鲜嫩,咸中带甜,非常下饭。
宫保鸡丁也是改良酱爆鸡丁而来。

  • 鸡胸肉250克
  • 黄瓜1段
  • 甜面酱30克
  • 黄酒8克
  • 白砂糖10克
  • 蛋清1个

Steps to make 酱爆鸡丁

  • 1.食材:鸡胸肉、黄瓜、生姜等。生姜切末。
  • 2.鸡肉切丁。
  • 3.放入一半黄酒、少许盐抓匀,放一半蛋清、适量淀粉,抓匀腌制。
  • 4.黄瓜切丁。
  • 5.用开水焯烫一下。
  • 6.锅中倒入略多的油,六成热,放入腌好的鸡丁,划散,炒至变色后捞出。
  • 7.多余的油倒出,留底油,放甜面酱,小火慢炒。炒至变成小疙瘩后,放入白砂糖、姜末、剩余的黄酒,炒出香味。
  • 8.放入鸡丁,大火快速翻炒均匀。
  • 9.放入黄瓜丁,炒至断生即可。
  • 10.出锅,装盘。
