果味多彩冰皮月饼
一年一度中秋节又要到了。这些天最忙的就数俺这些喜欢折腾美食的人了。
月饼,是中秋节不可缺少的一道风景,无论喜欢与否,中秋节的餐桌上,总会有月饼的。
今年不列外,俺还是自己做月饼。俺非常喜欢吃冰皮月饼,一来是因为冰皮月饼没有传统月饼那么油,那么甜,二来,冰皮月饼更容易操作,当然也更时尚。
今年俺有些创新,俺是用了水果来调制冰皮的。纯天然的颜色,还有着淡淡的水果味,
好看也好吃。

  • 红豆500克
  • 火龙果100克
  • 猕猴桃1个
  • 胡萝卜100克
  • 白糖150克
  • 植物油120克
  • 手粉50克
  • 清水50克

Steps to make 果味多彩冰皮月饼

  • 1.准备好食材
  • 2.准备好做冰皮月饼皮的水果,
  • 3.糯米50克炒熟做手粉。
  • 4.做红豆馅;红豆煮熟,
  • 5.连汤汁放入破壁机搅拌成泥,越细越好。
  • 6.赤豆泥放入炒锅,加油,糖,煸炒至汁干,
  • 7.捏上去象耳垂那样软软的就可以盛出,待用。
  • 8.分别把火龙果,猕猴桃,胡萝卜洗净切小块,
  • 9.猕猴桃放入料理机榨汁,
  • 10.火龙果放入料理机榨汁,
  • 11.胡萝卜放入料理机榨汁,
  • 12.这是榨好的果汁与白开水,分别取50克。
  • 13.100克冰皮月饼粉放入大碗,把果汁分别放入不锈钢汤勺煮开,趁热倒入冰皮粉,边倒边搅拌,
  • 14.再揉成光滑的饼皮糕团,这是全部做好的四种颜色的冰皮粉,
  • 15.把红豆馅与冰皮粉都按照25克的量搓揉成小圆球,
  • 16.再取5个不同颜色的冰皮粉揉成长条,揉成团,平分5粉,
  • 17.再揉成小圆球,注意不要揉的太过,要有颜色上的区分,
  • 18.取一饼皮小圆球,捏成光滑的饼皮,放入一个馅,
  • 19.慢慢地包裹好馅料,封紧口,搓揉光滑,再沾些手粉,
  • 20.放入月饼模内,上层压平,同时让月饼与月饼模接触面尽量无空隙,倒扣,按压月饼弹簧即可做出月饼。
  • 21.依次做好剩余即可。
