广式莲蓉蛋黄月饼

Steps to make 广式莲蓉蛋黄月饼

  • 1.将糖浆、枧水、玉米油倒入干净的大碗中,用刮刀搅拌至完全融合
  • 2.筛入面粉
  • 3.用刮刀翻拌均匀至无干粉即可。盖上保鲜膜室温放置一小时。
  • 4.准备莲蓉馅,分成50克一份,搓圆。鸭蛋黄备用。
  • 5.取一份莲蓉压扁包入一枚蛋黄
  • 6.用虎口慢慢向上收口,包裹住蛋黄
  • 7.收口捏好,再次搓圆
  • 8.静置好的面团分成20克一份,搓圆备用
  • 9.取一份面团,在左手心压扁
  • 10.放入一枚莲蓉蛋黄,用面皮包裹住
  • 11.右手虎口慢慢向上推移,使面皮均匀的包裹住馅料。
  • 12.收口捏好后搓圆
  • 13.手心拍少许干面粉,将包好的面团滚一圈,沾上薄薄一层面粉
  • 14.将面团放入月饼模具中
  • 15.倒扣在烤盘中,按压模具,再将压好花纹的月饼轻轻推出来
  • 16.烤箱预热,月饼表面喷一点点清水,防止烘烤时干裂
  • 17.烤盘放入烤箱中层,上火175度,下火150度烘烤10分钟
  • 18.鸡蛋黄中加入一小勺清水搅拌均匀
  • 19.将烘烤定型的月饼取出,用毛刷在月饼表面轻轻刷薄薄的一层蛋黄液,四周不用刷
  • 20.放入烤箱中层继续烘烤7、8分钟,直至月饼表面色泽满意
  • 21.烤好的月饼取出晾凉后密封保存
  • 22.等待月饼回油变软即可食用。
