Steps to make 蛋包饭寿司卷

  • 1.不粘锅中,刷油,烧热。将打好的蛋液加少许盐拌匀,摊在锅里,晃动锅子,让蛋液均匀。
  • 2.小火加热,到蛋饼底层凝固,顶部还未完全凝固的程度。
  • 3.将炒好的鲜虾鸡丁什锦炒饭堆在蛋饼上,堆成一个长条。没有炒饭的话,剩米饭也行。
  • 4.用木铲辅助,将一边的蛋饼翻过来包住炒饭,压紧
  • 5.继续卷动蛋饼,把整个米饭包成长条,接口在底部
  • 6.翻过来看,底部已经凝固粘合好了,继续转动鸡蛋卷,让各部分受热均匀
  • 7.将做好的鸡蛋卷取出,放在烤紫菜片上,用寿司卷帘辅助,小心卷起
  • 8.卷好后,接口朝下静置片刻
  • 9.左手拇指按住鸡蛋卷,食指和中指稍抵住内馅,右手用锋利的刀子将其切块
  • 10.切开就是这个样子了,摆盘即可
  • 11.卷的时候把米饭压实,切的时候就不会散。卷的时候要均匀用力,否则容易弄破蛋饼
