茄汁海鲜丸子
买了一包蛤蜊肉,搭配肉馅做了些海鲜丸子。自己做的丸子,除了调味,不加其它东西,所以味道很纯正,口感也很软嫩,就是做的时候比较费劲,搅打上劲儿是个力气活儿。但好吃又放心,累点儿也值啦。

  • 亨氏番茄酱30g

Steps to make 茄汁海鲜丸子

  • 1.把蛤蜊肉放在剁好的猪肉馅上,为了海鲜味更浓,我又放上了几个虾仁,一起剁碎。
  • 2.剁好的海鲜馅放入盆里,加入适量的黄酒,
  • 3.花椒提前用150克开水浸泡,取花椒水分次倒入馅中,顺一个方向搅拌,直到花椒水完全被吸收再放下一次
  • 4.花椒水全部搅打到馅里后再继续搅打,直到馅料上劲儿,然后加入盐和胡椒粉调味,继续搅拌均匀。为了更快上劲儿,可以加上摔打
  • 5.搅拌好的馅稍微放置一会儿后,用手挤成丸子
  • 6.水温50度左右即可下锅,一直要保持小火,不能让水煮沸,等丸子飘起来后再浸1分钟左右
  • 7.起来的丸子捞出后立即投入冷水中,这样可以使丸子更有韧性
  • 8.锅中放油,炒香姜蒜末后下入去皮的西红柿,
  • 9.加糖、盐、胡椒粉即少量的白醋,
  • 10.中小火煮到番茄融化为浓汁状,加入番茄酱,
  • 11.汆好的丸子放入
  • 12.待番茄汁包裹丸子,
