  • 牛奶巧克力300克
  • 苦甜巧克力200克
  • 蛋黄48克
  • 细砂糖36克
  • 牛奶150克
  • 吉利丁片3片
  • 柠檬汁1/2个
  • 淡奶油150克
  • 蔓越莓30克
  • 朗姆酒少许

Steps to make 蔓越莓巧克力月饼

  • 1.将蔓越莓切成小片放入容器中,加入适量的朗姆酒浸泡。
  • 2.泡软后沥干备用。
  • 3.吉利丁片用冰开水浸泡至软,沥干水分。
  • 4.隔水加热至融化。
  • 5.馅料制作:将蛋黄、细砂糖放入容器中,用电动打蛋器混合打发至细砂糖融化。
  • 6.将牛奶煮至90度,冲入打发好的蛋黄液中,搅拌均匀。
  • 7.加入融化后的吉利丁液,搅拌均匀。
  • 8.加入柠檬汁,搅拌均匀。
  • 9.加入打至六分发的淡奶油,搅拌均匀。
  • 10.加入泡软的蔓越莓,搅拌均匀,冷却备用。
  • 11.皮料制作:将巧克力隔水加热至融化。
  • 12.将融化后的巧克力液倒入模具中。
  • 13.放入冰箱冷冻5分钟。
  • 14.倒出没有凝固的巧克力,再放入冰箱冷冻5分钟,形成硬磕即可。
  • 15.蔓越莓巧克力制作:将馅料装入巧克力模中至八分满。
  • 16.放入冰箱冷冻。
  • 17.冷冻至硬取出,表面淋上融化的巧克力至满。
  • 18.抹平后放入冰箱冷冻至硬,脱模后即可食用。(如没有吃完,应放冰箱冷藏保存)
