冰皮月饼
自学烘焙一年来,这是第一次做月饼哟;而且还是广式的冰皮月饼。其实没有尝试原因有二:1是家人不是很爱吃月饼、2来自己觉得月饼模具清洗麻烦,所以一直未配模具。
而这次也是喜得套月饼模具,怎么也得试试看它的效果吧。家中没有糯米粉和粘粉,还特地去超市购买呢;刚开始操作有点难,二个下来就适应好多了;怎么样,第一次学做的冰皮月饼,还过的去吧~~~

  • 牛奶350克
  • 澄粉50克
  • 粘米粉75克
  • 糯米粉75克
  • 芥花油35克
  • 椰蓉馅50克
  • 豆沙馅350克

Steps to make 冰皮月饼

  • 1.提前准备好相关食材
  • 2.澄粉、粘米粉、糯米粉与白糖混合好,再分次倒入牛奶搅拌至完全溶合无颗粒
  • 3.加入芥花油搅拌均匀
  • 4.静置30分钟后掇入开水锅,开锅边蒸边搅拌约3~5分钟
  • 5.等面糊温度上升微热40度时离锅继续搅拌成糊状
  • 6.覆上高温保鲜膜加盖大火蒸25分钟左右
  • 7.取出待凉:看到表面平整中间无凹陷、表面略有浮油表明成功
  • 8.冰皮放凉至不烫手时,反复揉至光滑盖上保鲜膜放冰箱冷藏2小时
  • 9.按比例秤重豆沙馅和椰蓉馅: 5份豆沙馅(大):40克/份; 5份豆沙馅(小):30克/份 ;5份椰蓉馅:10克/份
  • 10.将5份小豆沙馅包入椰蓉馅
  • 11.5份豆沙椰蓉馅、5份豆沙馅备用
  • 12.锅中放入适量的糯米粉小火慢慢不停翻炒,直至面粉微微发黄并有面粉香气散发出来即可关火
  • 13.取出冷藏好的冰皮,秤重分割:55克/份
  • 14.取一饼皮用手心压扁,再将四周略为压薄后放入馅料
  • 15.借助手掌虎口将饼皮向中间推
  • 16.包严收口滚圆后拍上少许糕粉防粘
  • 17.在模具内部撒入糕粉后再磕掉多余糕粉
  • 18.将做好的月饼团放入模具内
  • 19.往下用轻力按压,略为停留,使其压出花纹更清晰
  • 20.提起模具
  • 21.冰皮月饼就OK了
