  • 细砂糖150克
  • 低粉150克
  • 黄油20克
  • 牛奶36克
  • 蜂蜜14克
  • 麦牙糖14克(水饴)

Steps to make 小山进海绵蛋糕

  • 1.低粉称量好后,提前过筛两次备用。
  • 2.水饴和蜂蜜称量好后,在微炉波里加热到40度取出,保温备用。
  • 3.黄油、牛奶称量后,加热至70度备用
  • 4.全蛋中加入细砂糖,用手动打蛋器隔热搅拌。
  • 5.全蛋液加热至40度的时候,先倒入加热后的水饴和蜂蜜,然后改用电动打蛋器开始打发
  • 6.打发至提起打蛋器,落下的蛋液不马上消失。
  • 7.用比重法来检视蛋液打发是否到位,将蛋液倒入100ml的容器中,去掉容器的重量后,26克为正好。如果大于26克说明打发过度了,小于26克说明没有打发到位,要继续打。
  • 8.蛋液打发完成后,将提前过好筛的面粉再次过筛入打发的蛋液中。分三次筛入,每次先用刮刀切拌,然后再翻拌至看不到面粉,整个过程要快速完成,避免消泡。
  • 9.加热至70度的黄油和牛奶,延着盆边转圈倒入蛋糊中,用刮刀充分翻拌。
  • 10.将拌好的蛋糊倒入模具中。
  • 11.提前预热烤箱至160度,中层,上下火,加热大约40分钟即可出炉。
