五仁月饼
月饼这东西,吃多了腻口,尤其是外面买的,又甜又油
当然现在市售的一些品牌月饼也出现假冒货,地下小工厂制作,用一些过期原料来填充,食品安全堪忧啊,还是自己做点健康
很多人说五仁是个“奇葩”,我到觉得它是“高富帅”“白富美”
坚果营养丰富,材料昂贵,一点不逊色蛋黄月饼
自己做的不甜,口感合适

Details of ingredients

  • 中筋面粉195g
  • 枧水4g
  • 核桃仁60g
  • 葵花籽仁90g
  • 黑芝麻60g
  • 桔饼20g
  • 细砂糖76g
  • 食用油46g
  • 130g
  • 转化糖浆135g
  • 花生油58g
  • 西瓜子仁90g
  • 松子仁50g
  • 冬瓜糖70g
  • 红绿丝20g
  • 白酒8g
  • 熟糯米粉178g

Steps to make 五仁月饼

  • 1.准备好所需的材料,糯米粉提前炒熟至微黄,放凉待用
  • 2.坚果类切碎,放入烤箱,160度烤10分钟左右,待用
  • 3.桔饼、冬瓜糖、红绿丝切碎待用
  • 4.转化糖浆倒入碗里,加入枧水、花生油用手动打蛋器搅拌均匀
  • 5.筛入中筋面粉
  • 6.用手揉成面团,至无干粉
  • 7.把揉好的面团盖上保鲜膜静置2个小时
  • 8.把放凉待用的坚果、桔饼、冬瓜糖全部放入大碗混合均匀,加入细砂糖、白酒、食用油、水、熟糯米粉搅拌均匀成团
  • 9.做好的五仁馅装入保鲜袋静置半小时
  • 10.静置好以后,将饼皮和五仁馅各分成20份
  • 11.取一块饼皮面团,压扁,放上五仁馅
  • 12.将面团放于左手虎口位置,从底部向上推面皮,让面皮慢慢的包裹在馅上,最后收口滚圆
  • 13.沾少许炒熟的糯米粉防粘
  • 14.月饼模具轻轻的扣到面团上面,力度均匀地向下压紧
  • 15.漂亮的花型就出来了,表面喷洒一层水(少许)
  • 16.烤箱预热200度,上下火中层烘烤5分钟定型
  • 17.用羊毛刷刷上少许蛋黄液,继续放入200度烤箱中,烘烤约15分钟,注意上色必要时可以加盖锡纸
  • 18.月饼出炉,放凉后,密封保存,至少两三天,等待回油就可以品尝了
