Steps to make 菠萝咕老肉

  • 1.猪肉切2厘米见方的块,加料酒和适量盐腌制20分钟;菠萝切差不多大小的块,在盐水中泡20分钟。
  • 2.青椒和洋葱切块备用。
  • 3.番茄酱、白糖、白醋、生抽、盐、清水调成味汁备用;淀粉加清水调成芡汁备用。
  • 4.面粉与水淀粉按照1:3的比例调成面糊,用筷子挑起可以拉成一条直线,这样的稠度合适。
  • 5.将猪肉块均匀的裹上一层干淀粉。
  • 6.锅中油烧至7成热,转小火,将猪肉块分别均匀的挂好面粉糊后入锅油炸。
  • 7.肉块炸成浅黄色,捞出沥油。
  • 8.将油继续加热,放入肉块,复炸成金黄色捞出。将洋葱和青椒放到油中炸一下立刻捞出(忘记拍照了)。
  • 9.炒锅中下少许油,放入调好的味汁烧滚,倒入芡汁,煮到浓稠。
  • 10.放入猪肉块。
  • 11.放入菠萝块,翻炒均匀,让每块材料都裹满酱汁。
  • 12.最后放入洋葱和青椒,稍稍拌一下,即可出锅。
