Steps to make 虾饺

  • 1.虾仁250克,一半拍成蓉,一半切成稍微大点的粒。猪肉正常应用纯肥膘肉!我改成4:6肥瘦的五花肉馅。
  • 2.先把虾泥与虾粒混合搅拌摔打出胶状。猪肉加入12g葱姜水用手顺时针搅拌、摔打。肉馅与虾混合后加入50克的冬笋丁。加入生抽,白胡椒粉,盐,糖拌匀。
  • 3.先将澄面与木薯粉混合均匀。用滚开!滚开!滚开的水135g烫面,边倒开水边快速搅动至盆中无干粉。
  • 4.烫好的面趁热揉搓均匀,并加入10克猪油揉搓至光滑细腻状。
  • 5.揉好的面团,要保温、保湿、防干。
  • 6.分成个体重12克的面剂子。将面剂子放入盆中保温、保湿、防干裂。
  • 7.可以毛巾上撒点油,刀侧面在毛巾上的油处抹过,然后按压成圆片儿。包时油面冲外放。不会压皮,可以用擀面杖擀皮。提醒:尽量不要用手粉。
  • 8.包入适量的馅料。馅料不要包太多。
  • 9.包成弯梳饺。这个需要慢慢练习。
  • 10.蒸屉上放切薄的胡萝卜片防粘,摆上包好的虾饺。
  • 11.水开上锅,大火蒸五分钟。
  • 12.Q弹的外皮,鲜香的内馅。
