猪肉肠粉
肠粉,又叫卷粉,早上街头巷尾都有买,鸡蛋肠、鸡肉肠、牛肉肠、猪肉肠等等,花样繁多。一般是两条肠粉,一肉一斋,加入沙皮酱、或是番茄酱、酱汁,营养美味、物美价廉的早餐就解决了。
在广东只要是有早点的餐馆,不论是高档的星级酒楼,还是便宜的街边小食店都能看到肠粉的身影。其雪白晶莹的外观、细腻爽滑的口感,还能按照喜好变换丰富多变的馅料,做出专属的你喜爱的口味。
在家制作成本低,方便简单,一粉浆,一食材,早餐妥妥的。

  • 肠粉专用粉100g
  • 清水250ml
  • 生菜1颗
  • 猪肉100g
  • 肠粉专用酱油1汤勺
  • 大蒜3粒

Steps to make 猪肉肠粉

  • 1.称量100g肠粉专用粉
  • 2.将250ml清水倒入粉中
  • 3.搅拌均匀后静置片刻
  • 4.准备猪肉和生菜
  • 5.猪肉剁碎
  • 6.放入盐、生抽、料酒腌制片刻
  • 7.生菜随意撕碎
  • 8.大蒜切成蒜粒
  • 9.蒜粒煸炒成金黄色后加入肠粉酱油和适量清水煮沸,盛出备用
  • 10.用硅胶刷在肠粉蒸盘中刷薄薄的一点玉米油
  • 11.将静置的粉浆重新搅拌均匀,在盘中倒入两勺粉浆,我用的是吃火锅的那种不锈钢汤勺
  • 12.将肠粉盘左右晃动一下,让粉浆均匀的铺在盘子上
  • 13.放肉末
  • 14.放生菜
  • 15.将蒸盘放入已经烧开水的锅中
  • 16.盖上锅盖旺火蒸两分钟左右
  • 17.用夹子取出蒸盘
  • 18.刮板从盘子一侧刮并卷起包住材料,一个肠粉就做好了
