【解密舌尖美味】#相逢#--大盘鸡
大盘鸡是新疆地区的名菜,是很多朋友去新疆餐馆必点的一道菜。大盘鸡是回民的清真小吃,曾经是专门做给清朝后宫的美食,后来出宫的老厨师将做法带到社会,最近十七八年开始盛行。大盘鸡的起源和长途车司机有很大关系。据说大盘鸡的前身本是辣子鸡,在司机的建议下,加入了汤汁、皮带面,司机们连汤带肉带面地吃下去,好吃又抵饱,由于鸡肉等得用一个大盘子才盛得下,“大盘鸡”因此声名远扬。
这道大盘鸡其实就是最家常的做法,和北方的土豆炖鸡块的做法大同小异,只是大盘鸡最后要加上新疆的皮带面,在家如果做可以省略皮带面这一步,也可以将皮带面换成面条,也是同样的美味的!

  • 1.主料:三黄鸡半只副料:土豆、青红椒、胡萝卜、干红辣椒、洋葱、葱、姜、蒜调料:生抽、糖、盐、料酒、花椒、大料、啤酒
  • 2.鸡剁成大块,土豆、青红椒、胡萝卜、洋葱切成滚刀块
  • 3.锅中烧水,水中加少许盐和料酒,将鸡块放入锅中焯烫,焯烫好后捞出备用
  • 4.锅中加油,油温5成热时放入白糖炒制
  • 5.白糖融化起泡时,倒入鸡块炒制,鸡块炒出香味后,将其它佐料入锅再煽炒
  • 6.再依次加入生抽、糖、料酒、盐调味、倒入啤酒一瓶,啤酒开后转中火炖制20分钟
  • 7.20分钟后将土豆块、胡萝卜块放入再炖至15分钟
  • 8.将青红椒块、洋葱块放入锅中炒制,待汤汁收浓时即可盛出食用
