陕西葱油锅盔馍
锅盔(英文:guokui)是陕西八大怪之一。人称“睁眼锅盔像锅盖”,即象头盔状,顾名思义又叫锅盔。是陕西省关中地区城乡居民喜食的汉族传统风味面食小吃。锅盔源于外婆给外孙贺弥月赠送礼品,后发展成为风味方便食品。锅盔制作工艺精细,素以“干、酥、白、香”著称。干硬耐嚼,内酥外脆,白而泛光,香醇味美。

Steps to make 陕西葱油锅盔馍

  • 1.取500g面粉,适量醪糟(发酵的作用),用温水将酵母粉化匀,开始和面第一步,揉匀面团;
  • 2.将面团放入盆中开始发酵,为了加快发酵速度,可将面盆放入37度左右的温水中,水凉了后再加热下,如此重复,1个小时内肯定会发酵好。发酵好的展示一

  • 4.取出发酵好的面团置于案板上,撒少许碱,和面一起揉匀,放置15分钟左右,接着将面揉团擀圆,倒少许菜籽油于面上,如图所示
  • 5.将油充分匀开
  • 6.给面上依次均匀撒盐、十三香、白胡椒粉、花椒粉、少许白芝麻、小葱花、较多白芝麻即可
  • 7.高清展示
  • 8.将面和料卷起来,盘成接近的圆形如图,并稍微擀圆
  • 9.电饼铛里倒少许油上下同时加热,油热了之后放入面饼
  • 10.开始烘烤,上面已有少许淡黄色焦状
  • 11.继续烘烤至金黄色,整个过程5-10分钟即可
  • 12.锅盔成品展示:外表金黄,切口砂白,酥活适口,再加上面香、葱香芝麻的香。真的是三个字:香香香!!!
