    Steps to make 红烧排骨

    • 1.排骨清水中浸泡一小时除去血水。
    • 2.冷水入锅,水开后放入适量料酒去腥,煮三分钟撇去浮沫,然后清水中洗净。
    • 3.控水备用。
    • 4.葱姜片,冰糖,桂皮八角,尖辣椒备好。
    • 5.锅内放油,微热后放入冰糖,小火炒糖色,慢慢融化后先出现大泡,转成微微冒泡。
    • 6.放入焯好的排骨翻炒几下上色。
    • 7.除尖辣椒外其他调料放进去继续翻炒均匀。
    • 8.加一瓶盖料酒去腥,视炒好的排骨颜色决定是否加生抽上色,我这道菜排骨少,所以没加生抽。
    • 9.转入高压锅里面,把尖辣椒放进去,倒入适量清水,加适量盐调味。
    • 10.上汽后中火十五分钟转小火五分钟。
