年夜饭.新年菜谱(四)创新版~京酱肉丝
一道老北京的“京酱肉丝”,这道菜以酱爆而成名。酱香浓郁,咸甜可口,我经过改良创新,把“甜面酱”换了“甜辣酱”,颜值担当,适合过年节日家宴。端上饭桌上又是一道“花开富贵”,“团圆美满”很有寓意。
⭐️ 京酱肉丝创新版
* 食材:猪里脊肉200克,薄百页2张,大葱1根,黄瓜1根,胡萝卜1根,生姜3片,鸡蛋1个,植物油适量。
* 调料1:盐2克,料酒1勺,胡椒粉1克,鸡蛋清1个,少许植物油。
* 调料2:甜面酱1勺,生抽1小勺,白糖4克,淀粉5克,适量水。
* 制作方法:把猪里脊肉切成丝,放入调料1,顺时针方向搅拌均匀静置待用。把黄瓜和胡萝卜洗净切丝(也可以用刨丝器刨),大葱取中间葱白的一段,切成细丝。把姜片切丝,取少许葱丝和姜丝用30ml开水泡一下待用。把薄百页用开水浸泡4~5分钟捞起滤干。切菜板洗净用开水冲一下,把薄百页铺在上面,再把切好的黄瓜丝和胡萝卜丝,大葱丝放入薄百页上,注意铺料的时候需要缩进一些,以便方便卷,慢慢卷起卷紧。然后切斜刀,准备盆一个,把切好的百页卷,围着盆边依次摆放成圆形。锅内放油烧热,倒入肉丝把肉丝快速划开至变白色,倒入准备好的葱姜水(只要水葱姜不要放入)伴炒均匀。把调料2调匀倒入继续翻炒至粘稠变色起锅装入盘中间。
