苏式月饼
之前做了广式和冰皮,今儿尝试做苏式月饼,它是源于苏州的糕点,受到江浙地区人民的喜爱,皮层酥松,色泽美观,馅料肥而不腻

Steps to make 苏式月饼

  • 1.把猪肉末放适量的盐和料酒,腌制半小时
  • 2.腌制好的猪肉末,倒入细砂糖和酱油搅拌均匀,拌成团备用
  • 3.把鲜肉分割成20克一个肉团,备用
  • 4.再来制作油皮部分,黄油提前软化加入细砂糖
  • 5.加入鸡蛋液搅拌均匀即可
  • 6.加入低粉,使面粉和黄油融合在一起
  • 7.揉成光滑面团
  • 8.把油皮面团,每个分割成20克,用保鲜膜覆盖,静置松弛15分钟
  • 9.接着再来制作油心部分,黄油用电动电蛋器打发到顺滑无颗粒
  • 10.加入低筋面粉,使面粉和黄油融合在一起,揉成面团
  • 11.把油心面团,每个分割成10克,用保鲜膜覆盖,静置松弛15分钟
  • 12.取一个油皮压扁,放一个有心在上面,包裹着

  • 14.把包好的面团收口朝下,用擀面杖擀成长椭圆形
  • 15.最后把做好的油酥,压扁然后包上肉馅,收好口
  • 16.在表面刷上蛋液,撒适量的芝麻
  • 17.放入预热好的烤箱,上下火180度,烤25分钟左右
  • 18.这是烘烤中的状态,
  • 19.烤至金黄即可
