金桔莲蓉月饼
中秋节做了好几个口味的月饼,今年俺家是水果月饼都是以莲蓉做基地,然后添加水果,虽然是我自己独创的,但味道口感都非常好,比用水果和冬瓜做得好吃多了。这款金桔莲蓉,是用炒好的莲蓉加上自己腌制好的蜜渍金桔,我不仅喜欢金桔的味道,还喜欢有点金桔的颗粒感,所以我没有把金桔和莲蓉一起打碎,而是切成丝放入。如果喜欢更细腻的,可以把金桔和莲蓉一起打碎。

  • 麦芽糖100g
  • 白糖60g
  • 花生油100g
  • 糖渍金桔200g
  • 中筋面粉100g
  • 转化糖浆75g
  • 花生油25g
  • 枧水1g

Steps to make 金桔莲蓉月饼

  • 1.莲子清洗后加入500克的水,用电饭煲的煲粥档煮到软烂
  • 2.倒入破壁机中搅打成细腻的糊
  • 3.把糊倒入面包桶里,用自动翻炒功能炒,中途分3次加入花生油,第二次加入油后,放麦芽糖和白糖,炒至吸收后再加最后一次油,至炒到莲蓉成团切不再沾铲子就可以了。
  • 4.糖渍金桔切丝,切的时候注意如果还有残留的核要挑出来。我这个金桔是用红糖做得,颜色较深,白糖和白糖做得颜色浅,我家冰糖做得没有了,就剩下这个红糖的啦。味道都很好啦
  • 5.最后把切好的金桔放入
  • 6.再翻炒几分钟,炒至均匀即可。炒好的程度也是馅料不再沾铲子。
  • 7.把馅料分成50克的剂子,面皮分成15克的剂子,3、7的比例比较容易包,如果喜欢皮更薄的,可以包成2、8,即馅50克,皮10克,但包的难度大。

  • 9.包严实后放入模具成形。模具要先撒糯米粉或者干淀粉放沾,撒好粉再磕出粉,不然粉太多了不好
  • 10.做好的月饼胚放入烤盘,烤前要喷水
  • 11.烤箱上下火180度预热完成后,入烤箱烤7分钟
  • 12.拿出来表面刷蛋液。注意蛋液的不是用全蛋,而是蛋黄和蛋清基本1:1,再加5克左右的水,这样上色效果较好。
  • 13.然后再入烤箱,上火170,下火160,烤15分钟出炉
  • 14.烤好的月饼切开,依稀还可以看到金桔丝,味道清淡的莲蓉搭配上果味浓郁的金桔,入口满满金桔的香味,口感则是莲蓉馅的口感,是非常好吃的一款的月饼哦
