Steps to make 红烧肉

  • 1.准备好食材。
  • 2.五花肉洗净切大块。
  • 3.冷水下锅,加适量料酒烧开,撇去浮末,煮一分钟。
  • 4.捞出控干备用。
  • 5.大蒜切段,姜拍松。
  • 6.锅中加少许食用油,下入冰糖小火煸炒,炒到冰糖溶化,从大泡泡变成细小泡泡,颜色呈琥珀色。
  • 7.下入肉块煸炒,炒到肉上色,炒出油脂。
  • 8.下入葱姜,八角,花椒,桂皮,香叶继续编炒,炒出香味。
  • 9.加入适量热水。
  • 10.开始调味,加入精盐,一品鲜酱油,料酒,冰糖适量大火烧开,小火慢炖。
  • 11.待肉酥烂时开始收汁,汤汁浓稠时加入少许鸡精既可出锅。
  • 12.软糯鲜香,不柴不腻。
