红酒骰子猪排
买了三块T骨猪排,把大块肉的部分割下来做主菜,剩下来的边边角角就想办法来对付,于是乎就想起了骰子牛排,就借鉴它的做法来做,很是美味,肉也不柴不老。再说说铸铁锅,用铸铁锅煎肉肉就是香,不但保温性能较好,煎起来也够锅气。

  • 西芹3瓣
  • 中型洋葱1个
  • 食盐1/4小勺
  • 黑椒粉1/4小勺
  • 食盐1/4小勺
  • 黑椒粉1/4小勺
  • 红酒2大勺
  • 生抽1大勺
  • 味啉1/2大勺
  • 胡椒粉1/4小勺
  • 蚝油1/2大勺
  • 白糖1/4小勺
  • 生粉1/2大勺
  • 芝麻油1/2大勺

Steps to make 红酒骰子猪排

  • 1.开锅放底油,升中大火,把肉块下锅,肉肉表面均匀撒上食盐1小撮、胡椒粉1小撮。
  • 2.等到底面的肉肉有焦香时,翻转,也均匀撒上食盐1小撮、胡椒粉1小撮,也煎成焦香。
  • 3.再翻转,收中火煎片刻至无血水,再翻转,用中火煎至肉内里基本熟,收火,不要动肉肉,让肉肉在锅内呆3分钟左右,肉就会自己熟了,肉肉好了,不用洗锅。
  • 4.置一碗,放红酒2大勺、生抽1大勺、味啉1/2大勺、胡椒粉1/4小勺、蚝油1/2大勺、白糖1/4小勺、生粉1/2大勺、芝麻油1/2大勺调匀。
  • 5.芹菜斜刀切块,洋葱也切块待用。
  • 6.把刚才煎的肉肉切成丁,长短约2公分。
  • 7.锅烧热,放底油约1大勺,倒入西芹和洋葱,快速翻炒,点入食盐约1/4小勺和黑椒粉1/4小勺,兜几下。
  • 8.把蔬菜拨一边,加入肉肉在蔬菜的上面,留点空位,把锅汁再搅拌几下,倒入空位处,用锅铲不断搅拌,烧至起大泡,收火。
  • 9.整锅兜均匀,完成,出锅。Enjoy !
