自制糯米酒
米酒又称甜酒、醪糟、酒酿。是我国民间的一种传统食品,已有两千多年的食用历史,是百姓喜爱的一种营养保健食品。
上好的糯米酒酒色白汁清,密香浓郁,香甜可口,饮后开胃提神,含有丰富的维生素、葡萄糖、氨基酸等营养成分,有活气养血、活络通经、补血生血、滋阴补肾及润肺这功效,是老幼皆宜的营养佳品。”

Steps to make 自制糯米酒

  • 1.糯米提前一天用清水泡上,水要多一点,以保证糯米泡涨后依然可以没过米
  • 2.泡好的米用手捻可以碾碎就泡好了
  • 3.将蒸锅里铺上屉布,将泡好的米再淘洗一遍控干水份,均匀的铺在屉布上,并戳几个洞。
  • 4.中火蒸40分钟
  • 5.蒸好的糯米饭倒入一个干净无油的带盖的盆里室内凉至温度在30--40度。不要完全放凉,这样做出来的米酒才更甜香。
  • 6.糯米饭温度降到35°左右,用凉开水(最好也是30度左右)把米冲散。加水时要一点点的加,加入后就立即把糯米饭打散。
  • 7.一点点加入30°左右的温开水把糯米饭打散,直到没有糯米团为止。但也不要用过多的水,以米散开又没有水分留在盆里为宜
  • 8.加入4克米酒曲充分搅拌均匀
  • 9.把拌好米曲的糯米饭用勺子压实,再从中间弄一个洞,这叫做窝,是让米曲更好的发酵和后期出酒。
  • 10.把1克米酒曲撒到挖好的酒窝里,最后再把凉开水注入到酒窝的三分之二处
  • 11.盖上盖子,放到温暖处发酵24-36小时。
  • 12.24-36小时后,已经有很多液体露出米面,这就是已经出酒了,而且可以闻到酒香味。
  • 13.用勺子压一下,可以看到出酒很多,米则是整团的漂浮在酒水的上面,这样就做好了。
