冰皮月饼可以说是非传统月饼的典范了,这几年很流行,相对于传统月饼来说油和糖的比例都较低,馅料和外形也更新颖一些,我选了自己喜欢的栗子蔓越莓做馅,自己做的馅香甜细腻,入口即化,直接吃也很好吃~

  • 糯米粉60g
  • 粘米粉40g
  • 澄面30g
  • 糖粉30g
  • 苋菜汁160g
  • 玉米油20g

Steps to make 【栗蓉蔓越莓冰皮月饼】

  • 1.准备好材料。板栗是直接买到的栗仁,如果是板栗需要先用高压锅焖熟剥壳。
  • 2.取小锅放入栗仁,加入少许水,小火焖煮至软烂。
  • 3.取出后自然冷却,放入搅拌机内加适量水搅打成细腻的栗蓉。不用搅拌机的话,可以用擀面杖碾碎,然后放入滤网中用勺子碾压过筛成泥,不过这个方法比较累。
  • 4.打好的栗蓉加入白糖和食用油。
  • 5.顺着一个方向搅拌均匀。
  • 6.然后分次加入面粉拌匀。如果打好或过筛碾压的栗蓉本身比较干,是大颗粒状的可不放面粉。
  • 7.将栗蓉放入炒锅中,小火加热快炒。
  • 8.待栗蓉变成粘稠易成型的馅时,停止加热。取出后放入冰箱冷藏1小时。
  • 9.准备蔓越莓适量。
  • 10.放入栗蓉中拌匀,准备做馅搓圆子。
  • 11.准备好材料。苋菜洗净,放入锅中加水小火烧开,待汁变成紫红色时关火取汁。苋菜汁的颜色变成较暗的紫红色为好,不然和成面团后颜色会很浅。将糯米粉、粘米粉和澄面混合,放入锅中小火快速翻炒,待颜色微微变黄没有生粉味时关火取出。
  • 12.取出后放入容器中,加入糖倒入油,分次倒入热苋菜汁,搅拌均匀晾至不烫手时和成面团静置15分钟左右。
  • 13.栗蓉搓成大小均匀的圆子,每个约25g左右。取适量面团,皮馅比例约1:1,面皮不要太薄,不然不容易包馅压花。
  • 14.放上馅后,捏合好完全包住内馅。
  • 15.如果不好操作可沾少许糕粉防粘,模子里也可以放一些糕粉抹匀然后轻轻敲出。
  • 16.把滚圆的团放入月饼模子中,倒扣压出。
  • 17.成型的栗蓉蔓越莓冰皮月饼,依次做出即可。
