台式卤肉饭
早起问闺女,吃什么早点,闺女迷迷糊糊的告诉我,就吃在姑姑家吃的那个肉饭。额!闺女好胃口,一大早就想吃卤肉饭,可是来不及哈,只好哄闺女,晚上一定给闺女做卤肉饭。

据说台式卤肉饭,一定要用到红洋葱酥,关于洋葱酥,我也试着炸了点,结果并不是那么简单,洋葱都炸焦糊了,却还没有酥,实在是没法用,只好去繁就简,用了炒洋葱的方法来做卤肉。

Steps to make 台式卤肉饭

  • 1.主料:五花肉500克
  • 2.主要调料:洋葱半个、大蒜、姜、桂皮、冰糖、草果、八角、老抽、生抽、料酒。
  • 3.做卤肉饭要统筹安排时间,先把米提前泡一小时然后再焖饭。
  • 4.现在准备做卤肉,五花肉洗净切成1厘米见方的块。
  • 5.洋葱切丝备用。
  • 6.大蒜、姜切末
  • 7.炒锅放少许油,放入五花肉小火煸炒。
  • 8.炒至五花肉变色逼出五花肉中的油,放蒜末、姜末、洋葱丝接着小火煸炒。(用五花肉中逼出来的油炒洋葱更香)
  • 9.直至煸炒到洋葱末变成焦黄色,放入八角、冰糖、桂皮草果等调料。
  • 10.加入五香粉,继续小火煸炒,直至冰糖溶化。
  • 11.加入料酒。
  • 12.加入水,加入老抽调色。(水要少加一些,没过肉两厘米即好,我的水添多了)
  • 13.加入生抽。
  • 14.大火烧沸,转小火炖煮。
  • 15.小火炖煮30分钟后,加入鹌鹑蛋。
  • 16.加入食盐调味。
  • 17.加入鹌鹑蛋、食盐后,接着小火卤制2.小时左右即好
  • 18.盛上一碗白米饭,放上卤蛋,再放上一大勺卤肉在上面,那叫一个香啊。
