  • 五花肉250克
  • 鸡蛋4个
  • 八角1颗
  • 5片
  • 洋葱100克
  • 1瓣
  • 香叶1片
  • 香菇5朵
  • 桂皮1小块
  • 冰糖20克
  • 老抽30克
  • 料酒15克
  • 照烧汁10克

Steps to make 卤肉饭

  • 1.带皮五花肉切成小丁。
  • 2.放冷水锅中焯水。
  • 3.水烧沸后洗净待用。
  • 4.香菇泡发后切成丁。
  • 5.洋葱切成丁。
  • 6.鸡蛋洗干净,煮熟,今天终于宠幸了一次蒸蛋器。
  • 7.锅里加油,放入洋葱丁翻炒。
  • 8.注意控制火候,不要炒焦。
  • 9.洋葱全部炒到深色,(不是焦哦)将洋葱丁捞出,油流在锅里。
  • 10.炒过洋葱的油,加入肉丁翻炒。
  • 11.肉炒到出油,表面略上色时候加入香菇丁。
  • 12.倒入炸好的洋葱酥。
  • 13.炒一分钟,加入料酒、酱油、老抽、冰糖、盐、照烧汁炒匀。
  • 14.加入1000克清水,煮好的鸡蛋,放入葱、姜、大蒜、桂皮、八角、香叶。
  • 15.烧沸后,捞去表面浮沫,改小火烧40分钟。
  • 16.烧好后去掉香料,最后在开大火把汁收的略稠即可,注意要多留点肉汁哦,不要烧干了,汁才是灵魂!
  • 17.将放装碗,淋上卤肉和肉汁,再切半个鸡蛋,完美了。
  • 18.烫两颗小菜心,拍个美美的照片,发朋友圈喽。
