轻芝士蛋糕
8寸的轻芝士蛋糕,入口即化。

  • 奶油奶酪200g
  • 牛奶200g
  • 蛋黄80g
  • 黄油50g
  • 低筋面粉40g
  • 蛋白160g
  • 细砂糖100g
  • 玉米淀粉27g

Steps to make 轻芝士蛋糕

  • 1.把材料过称准备好。
  • 2.奶油奶酪加入1/4的牛奶中,一边加热,一边搅拌至呈乳膏状时端离热水。
  • 3.分次少量地加入剩下的3/4牛奶,一边加一边用手动打蛋器搅拌均匀。
  • 4.分次加入蛋黄,用手动打蛋器搅拌均匀。
  • 5.黄油切小块隔水化成液态,加入步骤4奶酪糊中搅拌均匀。
  • 6. 把混合好的低筋面粉和玉米淀粉筛入奶酪糊中,用手动打蛋器搅拌均匀至无面粉颗粒。
  • 7.细砂糖分3次加入蛋白打发至湿性发泡(8分发)。
  • 8.取1/3蛋白霜加入步骤6面粉糊内,用橡皮刮刀翻拌均匀。
  • 9.将步骤8搅拌好的面糊倒回剩下的2/3蛋白霜内翻拌均匀。
  • 10.把搅拌好的面糊倒入底部包好锡纸的活底圆模内。
  • 11.烤箱150度预热10分钟,烤盘装水放底层,烤网放中下层以150度烤60分钟,转170度烤20分钟即可。
  • 12.烤好的蛋糕放至自然冷却,再移入冰箱冷藏6小时脱模。
  • 13.用热毛巾捂住模具边缘2分钟,再脱模会比较整齐。切蛋糕前要把刀加热,会切比较整齐漂亮,每切一次刀都要重新洗干净加热再切。
  • 14.口感柔软湿润,入口即化……
