萝卜卷(广昌)
萝卜在于潮汕来说是一种寓意很好的食物,在潮汕话中萝卜称为“菜头”也称为“彩头”就是好彩头的意思,所以每逢过节要“拜神明拜祖宗”潮汕人都会用白萝卜来做成各种美食小吃,今天我做的是萝卜卷潮汕话叫做“广昌”据我所知就是卷长的好彩头,但再具体的我就不是很清楚了

  • 五香粉5克

Steps to make 萝卜卷(广昌)

  • 1.备好所需的材料
  • 2. 萝卜去皮刨丝创好萝卜丝加入20克的盐,把其抓均匀,静置20分钟
  • 3. 把逼出的萝卜水沥出,再把萝卜按压成团,再次把水份逼出3个萝卜按压完毕,所剩的萝卜丝只有765克
  • 4.把花生稍微切一切把萝卜丝和芹菜梗,五香粉,番薯粉,花生碎,8克的盐,全部混合均匀
  • 5.用手把所有的材料混合至看不见干粉
  • 6.豆腐皮剪成自己喜欢的大小,我的是一张剪成4把萝卜丝码在腐皮上,再卷上
  • 7.用少许的番薯粉兑水,成糊状,涂在腐皮尾部让其粘贴刚好卷了5条
  • 8.冷水下锅蒸25分钟
  • 9. 蒸好的萝卜形状还是差不多的蒸好的萝卜卷趁热把其移至盘子,晾凉
  • 10.完全冷透的萝卜卷切片,不粘锅上少许油小火将其煎至金黄
