法式水果卷饼
买了香蕉不知道怎么吃
于是捣鼓了这个
冷冻的树莓解冻了有点悲剧 哎 就这样吧


卷饼部分非常简单 唯一要做的就是把蛋白打发而已,其他搅搅拌拌就行了~

  • 低粉80g
  • 溶化黄油10g
  • 蛋清2个
  • 牛奶75ml
  • 细砂糖35g
  • 麦芽糖1大勺
  • 泡打粉少许
  • 白糖15g

Steps to make 法式水果卷饼

  • 1.除蛋清和加入蛋清的15g糖之外所有材料混合搅拌。
  • 2.搅拌成如图2状态。
  • 3.另取一个干净的盆放入蛋清,分次加糖,打发至如图状态(湿性发泡略过)。
  • 4.将打发的蛋清倒入面粉糊,用橡皮刮刀均匀。
  • 5.搅拌至如图流动状态。
  • 6.平底锅略抹油(不沾的就不用抹了哈),小火加热(我的电磁调理是170度),舀1大勺5的面糊,从约20cm高度缓缓滴入锅中->这样成自然圆形。
  • 7.加热约2分钟到如图有气泡时迅速翻面 再加热1分钟左右(加热太久折起时会断裂)。
  • 8.加热完成迅速将卷饼用油纸折起固定(我用玻璃胶固定的油纸),浅色在内侧。
  • 9.所有加热完的卷饼加热后折起至完全冷却。
  • 10.鲜奶油+15g砂糖打发,裱入卷饼内侧,夹入喜欢的水果。
