椰香绿豆馅餐包
眼下正是干燥的季节,多吃绿豆好处多,所以今天尝试用自制的绿豆馅做面包,结果这款面包很受家人欢迎,自己感到特别开心呢!*

  • 细砂糖20克
  • 鸡蛋液20克

  • 无盐黄油20克
  • 脱皮绿豆100克

Steps to make 椰香绿豆馅餐包

  • 1.称100克脱皮绿豆洗干净
  • 2.倒入电饭煲锅胆,加入高出绿豆1厘米的水煮至水很少时,用铲子压成绿豆泥
  • 3.不粘锅内加入适量玉米油,加热后倒入绿豆泥,15克糖,保持小火慢炒
  • 4.炒至不粘铲子,感觉取下一块可以团成馅团即可(用木铲在锅中间画圆圈炒制比较好),放凉备用
  • 5.除馅料、表面用料和黄油外,所有材料放入大碗内,先用筷子拌均匀(备料时盐和酵母用面粉隔开,直接接触酵母易被盐杀死)
  • 6.再用手和面,刚开始有点粘手,揉一会就好了
  • 7.揉至可以拉出粗糙的膜
  • 8.这时加入软化的黄油,转到防粘垫上继续揉
  • 9.面团揉到扩展阶段,当然,如果揉到完全扩展阶段(拉出手套膜)更好了
  • 10.揉好的面团放入碗内,封好保鲜膜放在烤箱架上,下面放碗热水,关好烤箱门,给面团营造一个温暖且保湿的发酵环境(不用接通电源)
  • 11.约45分钟后,用手指粘点面粉在面团上戳个洞,不反弹即为发酵到位(反弹就是没发酵到位,戳下去连带着小洞周边一起塌下去就是发酵过度了)
  • 12.揉出面团里的气体后(所谓‘排气’),面团等分成5份,盖上保鲜膜,静置10分钟
  • 13.这时揉出5份绿豆馅团,每个约35克
  • 14.一份面团包入一个馅团
  • 15.收口要捏住
  • 16.收口朝下,依次包好,放在不粘烤盘上,之间保持一定间距(普通烤盘要铺上油纸)
  • 17.第二次放入烤箱进行发酵,架下依然放碗热水
  • 18.发酵好的面团涂上蛋液,撒上椰蓉(开始预热烤箱)
  • 19.面包坯放入预热好的的烤箱中层,上下火175度,20分钟左右(表面变黄即可)
  • 20.烤好放凉,看一下底部,颜色也很漂亮
