绿豆沙月饼

Steps to make 绿豆沙月饼

  • 1.这是刚烤好的月饼,还冒着热气呢,屋子里到处充满着月饼特有的香味,看着色香味俱全的月饼,是不是想有咬一口的冲动呢,我就没经得住诱惑,刚出炉就吃掉了一个,味道嘛:自己做的,味道当然是最棒的!不喜欢太甜太腻,所以在做绿豆沙馅的时候 。糖、油的量都减少了一些,所以口感清淡一些,个人认为更好吃,自己做的好处就是可以制作出适合自己口味的、健康的月饼。
  • 2.自己做的糖浆,色泽是偏深的金黄色,是提前做好的,已经放了十几天了。
  • 3.糖浆、枧水、花生油放在一起,充分混合,我没有打蛋器,用手搅拌的,混合的不是很充分。
  • 4.糖油混合好后加入面粉,加面粉的时候第一次加入一多半,翻拌均匀后再少量多次加入,直至能团成面团为止。
  • 5.做好的面团非常柔软,用保鲜膜包起来松弛两个小时以上,我是头天晚上做好的,打算第二天用,所以是放冰箱松弛的。
  • 6.松弛好的面团从冰箱取出,分成需要的大小(我的模具是100g的,我没有称重,是根据感觉分的),绿豆沙也分量后团成团。
  • 7.取一个面团和一个豆沙团,把面团稍压一下放在下,然后慢慢地往上推压。
  • 8.要慢慢地推压,让面皮均匀地包住馅。
  • 9.这是包好的。
  • 10.包好的饼坏放在干面粉里滚一下,然后用手拍去多余的面粉。
  • 11.模具里放一点干粉,用手转一下,然后倒出多余的面粉。
  • 12.把饼坏放入模具,用手压实,但也不要太用手。
  • 13.轻轻的把月饼推出来,放在铺好锡纸的烤盘里。
  • 14.我的烤盘不大,一盘只能放9个。烤箱200度预热5分钟,月饼临进烤箱前用刷子刷一层水(本来是用水壶喷的,可是小喷壶找不到了,只好用刷子了)。
  • 15.刷好水后,入烤箱200度烤10分钟,取出烤盘,稍等一会儿,刷上蛋液(用一个鸡蛋黄和一匙水调的),刷蛋的时候要轻一些,不要刷太多,不然烤出来花纹就没有了,刷好蛋液后快速放入烤箱,180度烤5分钟,再次取出,刷二次蛋液。
  • 16.刷好蛋液后,放入烤箱180度烤10分钟,至月饼金黄色或再深一些就可以了,个人比较喜欢颜色深一些。取出烤盘,把月饼放在烤网上自然冷却后,放保鲜袋一天就回油了,看到有些网友说是取出月饼后刷一层食用油,回油快一些,下次做时我要试试,不过我这种做法回油也是挺快的,第二天就油光光的,非常漂亮)。
