    Steps to make 酱猪蹄

    • 1.猪蹄买来后,在清水中浸泡去一部分血水洗净,在加了料酒的沸水中煮2分钟左右后,撇去浮沫后,再用冷水冲洗干净。
    • 2.猪蹄沥干水份备用。
    • 3.锅中油热后,加冰糖,至糖化开起泡成黄色。
    • 4.迅速下猪蹄翻炒几分钟至裹上糖色,加生姜再翻炒几下。
    • 5.加一勺黄豆酱,适量生抽、老抽、料酒。
    • 6.翻炒上色。
    • 7.加水没过食材,把八角、花椒、大蒜装进调料包并把它也放入汤中。
    • 8.中小火煮约30分钟,中间加入适量盐,最后大火收汤汁,加少量味精出锅。
