金丝酥黄菜
酥黄菜是一道传统的东北菜,属于甜品菜,以前在我们东北老家逢年过节的时候会做,因为在以前鸡蛋,油都非常紧缺,平时不会做的,它口感非常的酥脆,甜香,小孩子和女士非常喜爱,而且鸡蛋也非常的有营养,,随着人们对饮食要求不断的提高,和菜式的翻新,这些传统的菜好像很少有人做了,我也好多年没有做了,也可能是怕麻烦吧,传统的家庭酥黄菜是用鸡蛋加淀粉,摊成鸡蛋饼,然后再折在一起,切块,炸酥,挂糖的,我今天做的这个大都是饭店为了美观而这样做的,说实话我今天油倒的也少,如果倒半锅的油,会形成圆的,很漂亮,我这也就是个饼形,因为我一般炸东西剩的油都不留,所以炸东西的油尽量少放,免得浪费。

Steps to make 金丝酥黄菜

  • 1.鸡蛋打入碗里,用筷子搅打散
  • 2.加入湿淀粉
  • 3.搅打均匀备用
  • 4.事先要做一个小的工具,用易拉罐,从中间剪开,留底部
  • 5.因为易拉罐的底是往里突起的,所以要用擀面杖往下按按,用钉子钉四个小孔
  • 6.锅中倒入半下的植物油,把蛋液倒入易拉罐里,手拿一双筷子,顺一个方向不停的搅,边漏边搅,让落在油里的蛋丝都缠绕在筷子上(我要拍照不方便演示,就说明一下吧)
  • 7.缠到鸡蛋大小就可以了,炸到金黄色
  • 8.这个是炸好的,我撕开的,一丝丝的,很像金丝饼
  • 9.撒上熟的白芝麻,撒上白糖
