Steps to make 川味回锅肉

  • 1.五花肉一块清洗干净(用那些四方块的五花肉好看些)家里只剩一块长方形的啦
  • 2.锅中做水,五花肉凉水下锅放入一些葱姜和料酒
  • 3.煮到肉能用筷子扎透即可捞出晾凉备用
  • 4.然后切些配料,青蒜切的时候要用到拍两下在切成斜段
  • 5.凉凉的五花肉切成硬币大小的厚片
  • 6.锅中做点底油放入五花肉片最小火慢煸,还能煸出很多油出来
  • 7.煸到肉片自然发卷的状态然后把肉片扒到锅的一边,用锅底的油放入一勺豆瓣酱和十几粒豆豉小火慢煸
  • 8.然后在加入适量的料酒挥发走酱的异味慢慢煸出红油后把肉片和酱料一起翻炒
  • 9.然后放入葱姜蒜煸出香味,调入半勺的生抽,一克的盐,一勺半的糖,一勺鸡粉,最后放入青蒜小红椒段翻几下淋入几滴香油出锅
