表皮酥脆完全掩饰不了内心的肉感,厚切的里脊肉在热力的催化下幻化成夜晚的诱惑,梦里都是这满口的浓香和牙齿咬下时发出的悦耳声音。
炸好的猪排上桌时可以搭配不同的蘸酱,会有不同的风味。搭配辣酱油就是上海风味煎大排;搭配番茄沙司、法式芥末酱和美乃滋可以成就日式炸猪排风味;切成小条,就可以成为解馋过瘾的电视零食了

Steps to make 炸猪排

  • 1.猪里脊洗净,切成厚的大片
  • 2.用刀背或肉锤将两面都拍松。拍松的肉排会变薄,面积变大
  • 3.拍松的猪排放入盘中,用麻辣鲜料腌30分钟入味
  • 4.面粉和面包糠分别盛入两个盘子中备用。鸡蛋磕入盘中,打散备用
  • 5.把猪排放入面粉盘中先沾一层面粉,抖落掉多余面粉后放入蛋液中浸湿,再反复2次,也就是面粉 > 蛋液 > 面粉 > 蛋液
  • 6.然后放入面包糠中将两面都沾上面包糠,,用手按压,将面包糠粘牢
  • 7.在炒锅中注入油,中小火加热至175度左右。然后将处理好的猪排放入油中炸至两面微黄,捞出控干,调高油温,再复炸至金黄松脆即可。
