酸梅辣椒酱
年后上来,亲戚给了好多辣椒,特地把去年腌制的酸梅取出做成酸梅口味的辣椒酱,调料烹饪,是怎么配怎么好吃

Steps to make 酸梅辣椒酱

  • 1.指天椒用清水洗净晾干表面水分,用的桶盆等必须干净无油
  • 2.水分干后去掉蒂杆
  • 3.用干净的刀大概每根切成几段,要戴上乳胶手套做了,不然手会成麻辣猪手的
  • 4.酸梅取出,这是我用盐腌制了9个月的酸梅,味道奇香,每年的三五月份就会有酸梅,我都会腌上一缸,做调料
  • 5.酸梅取出中间的核,放置一边备用
  • 6.去料理杯,放入1/3容量的辣椒
  • 7.再放入1/3的酸梅,倒入适量的高度酒,搅打细腻
  • 8.全部搅打好的
  • 9.放入刚取出的酸梅核
  • 10.倒入盐
  • 11.全部拌匀,放入干净无水无油的玻璃容器保存。发酵一个星期即可享用
