【炸酱面,花样做】:海鲜炸酱面

Steps to make 【炸酱面,花样做】:海鲜炸酱面

  • 1.海米、干贝用温水泡发,干贝搓成细丝;冬笋切片,油菜洗净待用。
  • 2.虾去虾枪、须脚,背部用剪子开口挑出虾线。
  • 3.虾、冬笋、豌豆,入沸水锅中焯熟捞出沥干。
  • 4.随即放入冰水中冷却,待用。
  • 5.碗中调入3勺豆瓣酱、1勺甜面酱、1勺蚝油、2勺酱油,加少许清水稀释搅拌均匀。
  • 6.锅置火上少许油烧热,下入姜末爆香,倒入海米、干贝丝煸炒至淡淡的金黄色。
  • 7.倒入混合的酱料搅匀,不停翻炒。
  • 8.炒至酱汁出红油,加白砂糖调味,继续翻炒。
  • 9.直至浓稠即可。
  • 10.锅中水烧沸,放入蝴蝶面搅散后煮至断生,捞出过温水盛在碗内。
  • 11.油菜放入煮面锅中焯烫后捞出。
  • 12.码上虾、冬笋片、豌豆粒,加海鲜酱即可食用。
