素炒鳝鱼丝

Steps to make 素炒鳝鱼丝

  • 1.干香菇10个,洗净,冷水泡发。
  • 2.用剪刀顺着香菇圈剪成十厘米长短的条状(形状类似鳝鱼丝)。
  • 3.放入热水锅中稍烫,即捞出,备用。
  • 4.冬笋1个切丝,放入冷水锅中(这样能更效地去除笋的酸涩味),小火煮开,捞出,控干,备用。
  • 5.芹菜4根,去根去叶,洗净,切小段,放入开水锅中焯一下,捞出,控干,备用
  • 6.青红椒各半个,洗净,切丝状,备用。
  • 7.热锅上油,炒香葱姜碎。
  • 8.将香菇条、冬笋丝、芹菜段、青红椒丝一并倒入,大火快炒。
  • 9.加1小茶匙生抽。
  • 10.加1勺蚝油。
  • 11.加1小茶匙盐。
  • 12.加1小茶匙白糖、少许胡椒粉。
  • 13.加适量牛肉粉,炒匀,淋入水淀粉,即可出锅。
