  • 线辣椒面10克

Steps to make 公婆饼

  • 1.把所有面团原料混合,搅拌成很软的面团,盖上保鲜膜醒发至2倍大。
  • 2.醒面的时候做馅料:五花肉切块,用美遇料理机搅碎。
  • 3.加入姜末、蒜末、生抽、老抽、十三香、花椒粉搅拌均匀。
  • 4.线辣椒面和孜然粉混合均匀。
  • 5.美遇钛合金炒锅预热,加入适量底油,下入郫县豆瓣酱或火锅底料炒出红油。
  • 6.下入线辣椒面和孜然粉炒出香味。
  • 7.加入肉馅翻炒均匀,加入少许水,盐(酌情放)、味精定好味,炒熟后放凉备用。
  • 8.案板和手上抹油,把发酵好的面团排气,下成75克或100克的剂子。
  • 9.取一个面团擀成长条状,铺上馅料。
  • 10.从上至下一边卷一边往里收。
  • 11.收严剂口,把两端往中间折,整理成圆饼状。
  • 12.粘上白芝麻。
  • 13.晶盾平底锅预热,加入适量油,下入生坯,用手把饼坯摁大摁薄。
  • 14.底面上色后翻面。
  • 15.烙至两面金黄即可。(这个饼做一个烙一个)
