湖北鱼糕
湖北人爱吃鱼,但吃鱼不见鱼。说的就是将青鱼或草鱼或花鲢做成鱼糕或鱼丸。最有名的当数荆州鱼糕,做好的鱼糕即食或与肉丸相搭蒸食,烩菜均可。尤其适合老人和小孩食用。

Steps to make 湖北鱼糕

  • 1.小香葱1根切碎、姜2片切蓉加水揉搓,做成葱姜水、过滤掉葱姜渣,取30g-50g葱姜水都行。加水多少与鱼糕软硬有关,根据自己口味来。
  • 2.将做水煮鱼剩下的半片草鱼肉装进厚些的保鲜袋内,用擀面杖砸成泥。正确做法是:鲜鱼不去皮,剖成两半,去掉肋骨,泡水去腥,再用刀背慢慢刮出细腻的鱼泥,中间靠近鱼皮的鱼红不要刮。
  • 3.草鱼肉260g,挑出鱼刺、筋膜。刀刮费时,但此步会简单许多。因为鱼刺、筋膜大部分都留在鱼皮上了。
  • 4.猪肥肉50g剁成小块(无料理机要剁成细蓉),加入蛋清25g。
  • 5.先加一勺鱼泥在猪肥肉中,用料理机搅打成细腻状。
  • 6.加入全部的鱼肉,料酒10g,盐5g,糖3g。葱姜水分两到三次加入。
  • 7.鱼肉要打至非常细腻状。
  • 8.加入10g玉米淀粉,白胡椒粉适量。
  • 9.先将淀粉拌至不见干粉,再用料理棒搅打均匀。
  • 10.容器上刷点猪油,装入鱼泥抺平表面。盖不盖保鲜膜都行。
  • 11.水开上锅蒸半小时左右。将蛋黄液刷在鱼糕表面,继续蒸2-3分钟。
  • 12.也可将鱼糕切成两块,在四周都刷上蛋黄液蒸至蛋黄凝固。
  • 13.蒸好的鱼糕金灿灿的。
  • 14.切片即食,或做菜、做汤。
