菰米米酒
话说前几天不是写了菰米的菜谱嘛,这几天来问菰米是什么啊在哪里买的啊口感怎么样啊容易不容易熟是什么营养成分啊搭配什么中药(搞得我和药贩子似的……)各种都有,问口感的人居多~
菰米的口感很像燕麦米,不是燕麦片,而是也很长的稻壳黄色的燕麦米,就是外面脆脆的,很有嚼劲~突然觉得我也许能从此做文章~
去年暑假的时候去兰州玩,一发不可收拾的爱上了当地的甜品甜醅子,基本就是大家早上吃拉面我吃甜醅子,大家中午吃拉面我吃完拉面吃甜醅子,大家晚上吃拉面我吃个锅盔吃甜醅子,就像是长在杜记甜食门外了……虽然什么灰豆子酿皮也还不错,但是怎么比得上我对甜醅子的一腔热情!
后来死皮赖脸蹭在杜记甜食那里套配方,没想到人家倒是大方得很,说甜醅子就是燕麦发酵的,亏得我舌头和脑子灵,感觉有种微微的酒香,回家死马当活马医用米酒酒曲试了试,调整了两遍之后竟然成功!
这么口感类似的菰米,也做点米酒试试!不过因为菰米外壳实在是硬,加了糯米一起呢~

Steps to make 菰米米酒

  • 1.菰米提前一晚上用冷水泡好
  • 2.糯米也提前几个小时稍微泡一下
  • 3.然后电饭锅里面加入糯米,稍微加一点水,加入菰米
  • 4.蒸半个小时,糯米会再吸一点水分,然后拌一下,摊开放凉
  • 5.凉了之后加进去半包(4g)酒曲,使劲拌匀
  • 6.然后倒进去适量凉开水
  • 7.然后把拌好的米饭放进面包机的内桶里面
  • 8.上面套上塑料袋或者是保鲜膜
  • 9.按一个米酒程序就可以啦!大概是一天,上海气温低我发好了之后又加了六个小时
