荠菜猪肉包
最近新入了一款厨房小电器,九阳饺子神器Pro,即和面绞肉机。和面功能非常强大,200克面团,40秒左右就能和成面团。绞肉更不用说了,十几秒就能达到理想的状态。今天就让拿它练练手,做了一款荠菜猪肉包子,受到家人的一致好评。

Steps to make 荠菜猪肉包

  • 1.准备面粉一杯200克,半杯清水中放入2克酵母搅拌均匀。
  • 2.将面粉放入九阳饺子神器Pro的玻璃杯中,将拌好的酵母水加进去。
  • 3.按住和面功能键,40秒钟左右就能和成一个比较光滑的面团。
  • 4.接着要做一个绿色的面团:菠菜洗净后放入锅中焯一下水,将菠菜捞出过一下冷水。
  • 5.将菠菜控干水分,放入不锈钢杯中,再加入少量的清水打成细腻的菠菜汁,加入2克酵母和1.5克小苏打,搅拌均匀。这款和面绞肉机,自带不锈钢杯和玻璃杯,一个用来和面,一个用来绞肉和绞菜,互不串味。
  • 6.将200克面粉放入到玻璃杯中,加入上一步骤的菠菜汁,大约110克。按和面功能键,和成一个光滑的面团。大概40秒左右就能成团。
  • 7.白色和绿色两个面团和好,盖上湿布,室温发酵至2倍大。
  • 8.猪肉和姜块放入到不锈钢杯中,搅打成猪肉泥。
  • 9.放入焯过水的剁碎的荠菜,放入胡椒粉,老抽,生抽,葱末,再将烧热的葱油淋在葱花上,激发出香味儿。最后放适量的盐,顺一个方向搅拌均匀。
  • 10.将两色面团取出来分别滚成条状,分别从中间纵向对半切开。白色和绿色分别配对,再次滚成条状。
  • 11.切成一个个大小均匀的面剂子,再擀成中间厚四周薄的圆面片。
  • 12.取一张面片中间放入适量的馅料。
  • 13.包成柳叶的形状。
  • 14.垫上玉米皮,放入蒸锅中醒发20分钟左右。明显感觉包子体积变大,拿在手里感觉轻飘飘的就可以开火了。大火烧开后,转中火蒸13分钟左右。
  • 15.包子蒸好后不要立刻掀锅,焖5分钟后再开锅。蓬松宣软,馅料也很鲜美。
