【徽菜】--雪湖玉藕
风味特点:1.安徽天柱山下雪湖所产的藕,白如玉脂,爽若脆梨,当地称其为仙品。   历史上曾作为贡品,进献皇帝,制做御膳。传说东汉末年,曹操率军攻打舒   州(今潜山县),城破,其中有九名战将护百姓退至雪湖旁天寨被俘,曹兵   将他们捆在一起斩首,并投入湖中。湖水顿染,从此藕生九孔,洁白坚贞,   味比以前更加脆嫩。后为纪念他们,因将雪湖更名为“血湖”。   2.此菜清脆爽润,酸甜适中,是安徽天柱山地区传统甜味冷盘。江南水   乡产藕地区,也多有此制法。

  • 1.先把藕洗净。
  • 2.刮去藕皮,去掉两头藕节。
  • 3.把藕切成薄片。
  • 4.将藕片放沸水中略烫,以保持脆嫩为宜。
  • 5.捞出后过一下凉开水。
  • 6.白醋、和白糖。
  • 7.把藕控干水分。
  • 8.撒上白糖,浇上白醋。
  • 9.拌均匀即可。
  • 10.盛到盘子里,就可以吃了。
