“法式长棍面包(Baguette)是一种最传统的法式面包。法国面包的代表就是“棍子面包”,baguette原意是长条形的宝石。法式长棍面包的配方很简单,只用面粉、水、盐和酵母四种基本原料,通常不加糖,不加乳粉,不加或几乎不加油,小麦粉未经漂白,不含防腐剂。在形状上、重量上也统一为每条长76cm,重250g,还规定斜切必须要有7道裂口才标准。”

Steps to make 法棍

  • 1.用清水把酵母和开,静放一会。
  • 2.盆里准备好面粉,加入盐。
  • 3.边加入面粉边搅拌面絮。
  • 4.和成光滑面团。醒发30分钟。
  • 5.醒发之后,再揉成光滑面团。
  • 6.面团分三等份。
  • 7.搓圆后醒10分钟。
  • 8.取一面团擀成长舌状。
  • 9.卷起来收口朝下。
  • 10.全部做好之后,放不粘烤盘上。
  • 11.入烤箱进行发酵,下面放小碗水保持湿度。
  • 12.发酵为原来的2倍大之后,筛入干粉,在面包上割几个口。
  • 13.烤箱预热190度烤20分钟,调200度烤10分钟。温度与时间以自家烤箱为准哦。
  • 14.烤好的面包。刚出炉时好脆。很有嚼劲。
