Steps to make 苏式豆沙月饼

  • 1.水油皮:面粉500克,猪油70克,黄油30克,水300克。
  • 2.酥心:面粉450克,猪油150克,黄油75克。
  • 3.根据上述原料,分别调和出水油皮和酥心。水油皮和成团后可以用摔打面团的方法使其形成面筋。有时面团反复用手擦透。让面团静置半小时,释放一下筋力。我用了大包酥的方法来制作,这样操作稍微简单一些。把水油皮擀开,放入酥心,
  • 4.包裹起来。
  • 5.擀成薄片,对折,静置十分钟。
  • 6.再次擀开成薄片,从一般卷起搓成长条。
  • 7.用刀切成一个个小剂子。
  • 8.压扁,或用擀面棍擀开。
  • 9.包入豆沙馅心。
  • 10.做成圆饼,码放在烤盘中。
  • 11.找一个形状好的八角沾点食用色素压出花纹点缀一下。
  • 12.放入预热190℃的烤箱,烤半小时左右。
  • 13.烤好的月饼,非常酥香。
