香菇春笋炖鸡块

Steps to make 香菇春笋炖鸡块

  • 1.鸡剁成块后放入冷水锅中烧开焯水。
  • 2.将焯过水的鸡块捞出用冷水冲去血沫控干水分备用。
  • 3.葱切段,姜切片备用。
  • 4.锅内倒适量油,加入一小把冰糖。
  • 5.冰糖融化后放入花椒、八角、香叶炸香。
  • 6.倒入控干水分的鸡块翻炒上色。
  • 7.加入葱姜略做翻炒。
  • 8.加入老抽和生抽继续翻炒至鸡皮出油,变成晶莹微透明的状态。
  • 9.加入没过鸡肉的热水。
  • 10.大火将锅内的水烧开后撇去浮沫,调小火继续炖约一小时。(时间取决于鸡的肉质)
  • 11.鸡将近炖熟的时候将香港洗净掰成块。
  • 12.笋去皮切块。
  • 13.将笋放入锅中焯水后控干水分备用。
  • 14.鸡肉软烂后将香菇和笋放入锅中。
  • 15.加入适量盐调味。
  • 16.将蔬菜和鸡块翻炒均匀后,调大火收干汤汁后出锅。
