Steps to make 老虎芙利安

  • 1.准备好所需材料,粉类提前过筛备用
  • 2.将黄油放入锅中,中火加热,一边加热一边用手动打蛋器搅拌
  • 3.加热至冒泡,变成深褐色关火,将锅放入水中使其停止变色,进行降温
  • 4.将蛋白、蜂蜜倒入厨师机桶内,混合均匀
  • 5.加入杏仁粉、糖粉、低筋面粉,继续慢慢搅拌至粉粒消失
  • 6.加入烧焦的黄油
  • 7.继续搅拌至融合后,完成面糊
  • 8.盖上保鲜膜(防止表面干燥),在避光处放置数小时,让其充分融合
  • 9.放置好的面糊稍搅拌后,再将做好的面糊倒入圆形空心模具中,8-9分满
  • 10.烤箱预热180度,上下火中层13-15分钟,烤制金黄色
  • 11.从模具中倒扣出来,放凉备用
  • 12.将白巧克力与淡奶油一起加热,沸腾冒泡后,搅拌至整体有光泽
  • 13.抹茶粉加入少量热水溶化抹茶后放凉
  • 14.加入白巧克力甘纳许中,混合均匀,制作成抹茶巧克力甘纳许,放入冰箱冷藏至浓稠
  • 15.冰箱取出抹茶甘纳许,倒入裱花袋,挤入芙利安凹陷处(可适当表面进行装饰)
