母亲节献礼——“花样”蛋糕(超多小贴士)
周日就是母亲节了,往年都是送老妈康乃馨,今年想着能不能换点花样。突然想到之前做过的鲜花蛋糕,真的再合适不过了。嫌送鲜花俗气,那就送鲜花蛋糕吧。这个蛋糕做起来很简单,还不用担心抹面裱花的问题,简直是小白的福音。

  • 蛋白4个
  • 糖粉70g
  • 蛋黄4个
  • 牛奶40g
  • 色拉油40g
  • 低筋面粉70g
  • 淡奶油700g
  • 糖粉40g
  • 色素(紫色)2滴
  • 鲜花几朵

Steps to make 母亲节献礼——“花样”蛋糕(超多小贴士)

  • 1.准备好原材料,蛋清蛋白分开,分别装入干净、无水、无油的打蛋盆中。(在天气炎热的季节里,鸡蛋可以放入冰箱冷藏一两小时后再取出来使用。)
  • 2.将蛋黄打散,加入牛奶和色拉油,一直将它们搅拌到表面有一层细腻的泡沫,即乳化完毕。(我一般是画“Z“字”。一直搅拌到打蛋头划过之后,有纹路出现。乳化的过程我大概用了4分钟。乳化后的蛋黄糊,可减少油水分离,增加起泡力,使体积变大。与面糊混合,可以让蛋糕质地变得蓬松柔软。)
  • 3.筛入低筋面粉。(面粉一定要过筛!!!过筛后的面粉将会带入更多的空气,同时可以防止面粉受潮结块,更容易拌匀。)
  • 4.用手动打蛋器画“Z"字,搅拌成细腻光滑状,放在一旁备用。这时候可预热烤箱,170℃。(烘烤的温度需要根据自家烤箱进行调节。预热的温度可以比实际烘烤温度高15-20℃,因为当你打开烤箱门的时候,冷空气进入之后,烤箱内的温度会迅速下降。)
