红焖鸡块五花肉
农村拿来的大公鸡,在山上散养的,特别大,留着慢慢吃吧,今天先红烧一部份,加了一块五花肉,一起炖煮特别香,真是滋味醇厚,香浓入味。

Steps to make 红焖鸡块五花肉

  • 1.乡下散养的大公鸡剁碎,太大了,只炖了小三分之一。
  • 2.冷水下锅焯水,加适量料酒,烧开后撇去浮末,煮三分钟捞出洗干净血末控干备用。
  • 3.锅中加少许食用油,加白糖炒糖色。
  • 4.不断的搅拌,待糖浆变成枣红色。
  • 5.下入鸡块和五花肉煸炒,炒至上色煸炒出油脂。
  • 6.下入大葱、姜片、八角、桂皮继续煸炒,炒出料香味。
  • 7.加入适量清水,加入精盐、料酒,大火烧开小火慢炖40分钟。
  • 8.炖煮到肉基本成熟后,加入适量一品鲜酱油,再炖煮二十分钟。
  • 9.最后要留一些汤汁,拌饭吃非常香。
  • 10.成品。
